Mini Carrot Muffins

Mini Carrot Muffins
  1. 2 cups almond flour
  2. 2 tsp aluminum free baking powder
  3. pinch of pink Himalayan sea salt
  4. 2 tsp organic vanilla extract
  5. 3 organic eggs
  6. 1 cup shredded carrot
  7. 1 tsp xanthan gum
  8. 3 tbsp cinnamon
  9. ½ cup dark grade maple syrup
  10. ½ cup shredded unsweetened coconut
  11. ½ cup raisins
  12. ½ cup olive oil
  1. Pre-heat oven to 375 degrees Fahrenheit
  2. Combine all ingredients and mix well
  3. Grease mini muffin tin with coconut oil
  4. Fill muffin tins level with batter
  5. Bake for 17-18 minutes or until toothpick comes out clean from the muffins.
