Baked Pears with Cinnamon Crumble
Serves 8
  1. 4 Ripe Green Pears 3/4 Cup walnuts or pecans crushed (or a bit of both) 1/2 Cup Raisins 1/4 Cup Shredded Unsweetened Coconut 1/4 Cup Coconut Oil Soft or Melted 2 Teaspoons Coconut Palm Sugar 1 Teaspoon Organic Vanilla Extract 1 Tablespoon Cinnamon (add more if you love it)
  1. Pre-heat oven to 375 degrees Fahrenheit
  2. Slice pears in half and scoop out the core to make room for the filling & place in an oven-friendly baking dish
  3. In a medium-sized bowl combine all of the ingredients and mix well until crumble is sticky
  4. Fill cored pears with crumble mixture and put in the oven for 17-20 minutes
  5. To double check they are done pierce the pears with a fork to ensure they are nice and soft.
  6. Serve alone or with coconut ice cream or over Gluten-free oatmeal or Quinoa
  1. Cinnamon is great for supporting blood sugar, as well as the healthy fats in the nuts and coconut oil. This snack is also a great source of fiber as well.
  2. With the holidays just around the corner I love using cinnamon in most of my sweet dishes as it fills the house with a lovely aroma.
