Banana Chocolate Chip Pancakes
Serves 10
  1. ¾ cup Bob’s Red Mill GF Flour
  2. 1 tsp coconut sugar
  3. 1.5 tsp baking powder
  4. Pinch of sea salt
  5. 2 eggs
  6. ½ cup almond milk
  7. 2 tbsp olive oil
  8. 2 mashed bananas
  9. ½ cup dark chocolate chips
  10. Extra banana for topping
  11. Maple syrup for drizzling
  1. In a large bowl, combine flour, coconut sugar, baking powder, sea salt and mix well.
  2. Add eggs, almond milk, olive oil and mashed bananas and whisk well.
  3. Mix in chocolate chips.
  4. Heat a frying pan with coconut oil over medium heat.
  5. Pour batter into pan to make pancakes the size of your choosing. Flip when tops are bubbling and golden brown on the bottom.
  6. Serve with banana and maple syrup.
  7. Enjoy!
  8. Serves about 10-12 small pancakes.
