Classic Blueberry Lemon Loaf

Classic Blueberry Lemon Loaf
  1. 2 cups gluten-free flour (Bobs 1-2-1 Flour)
  2. 1 tsp baking powder
  3. ½ tsp baking soda
  4. 1 tsp cinnamon
  5. 4 free range eggs
  6. ¾ cup Yoso coconut yogurt
  7. 2 cups fresh blueberries
  8. 2 meyer lemons sliced
  9. 1 tsp of organic lemon extract
  10. 1 cup of olive oil
  11. ¾ cup coconut sugar
  12. 1 tsp vanilla powder
  13. Pinch of sea salt
  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease a baking pan with coconut oil.
  3. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt, vanilla powder, coconut sugar and mix well.
  4. Add eggs, olive oil and coconut yogurt and whisk well.
  5. Add the blueberries and mix well.
  6. Add mixture to loaf pan and top with additional blueberries and small lemon slices
  7. Bake for 55 minutes and let cool, slice and serve.
  8. Enjoy!
