Teff Chocolate Hazelnut Cookies

Ingredients

1 ½ cups organic teff flour
Pinch sea salt
½ cup organic dark grade maple syrup or yacon syrup
½ cup organic olive oil
1 tsp organic vanilla extract
1 cup organic hazelnut butter
½ cup of organic cacao nibs or vegan chocolate chips

Instructions

  1. Pre-heat over to 350 degrees Fahrenheit
  2. Combine flour, sea salt and chocolate chips in a large bowl
  3. Combine maple syrup, olive oil, vanilla and hazelnut butter in a high speed blender or food processor and mix until smooth and creamy
  4. Mix wet ingredients in with the dry and mix thoroughly with hands until dough forms a large ball
  5. Take 2 large pieces of parchment and cover 2 cookie sheets
  6. Roll dough into walnut size balls and flatten with a fork
  7. About 12 cookies per cookie sheet fits well
  8. Bake for 10-12 minutes (take a peek at the underside of the cookies if they are really brown they are done)
