White Coconut Lime Smoothie With Mint Chia Pudding
FOR THE CHIA PUDDING BOTTOM
- 4 tbsp chia
- ¼ cup unsweetened coconut yogurt
- ½ tsp peppermint extract
- ½ tsp matcha powder
FOR THE SMOOTHIE
- 1 frozen banana
- ½ lime squeezed
- 3 tbsp coconut yogurt
- 3 tbsp coconut cream
- 1 scoop collagen or protein powder
- ½ avocado
- 1 stemless wine glass.
- Mix matcha, peppermint and yogurt with chia add to the bottom of the wine glass.
- Blend all smoothie ingredients and add smoothie to chia bottom.
- Serve and enjoy.
