In a large bowl add all the dry ingredients (flour, baking powder, baking soda, xanthan gum, vanilla, cinnamon, all spice, nutmeg, oats)and mix well.
Add eggs, olive oil, maple syrup and mix well.
Add the shredded apples and pecans and mix.
Spoon into the muffin tin
Mix in a small bowl the coconut oil, coconut sugar and cinnamon for the topping.
Drop a small amount onto the top of each muffin.
Bake for 45 minutes.
Let cool and enjoy!
