Gingerbread and Egg Nog Pancakes with Maple Syrup

For the Gingerbread Pancakes
- ½ cup gluten-free all purpose 1-2-1 flour from Bob’s Red Mills
- 1 tsp cinnamon
- 2 tbsp molasses
- ½ tsp all spice
- ½ tsp ginger powder
- ½ tsp cloves
- 1 tsp coconut sugar
- pinch of sea salt
- 1 tsp baking powder
- 2 eggs
- 2 tbsp olive oil
- 2/3 cup vanilla unsweetened almond milk
For the Egg Nog Pancakes
- ½ cup gluten-free all purpose 1-2-1 flour from Bob’s Red Mills
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp coconut sugar
- pinch of sea salt
- 1 tsp baking powder
- 2 eggs
- 2 tbsp olive oil
- 2/3 cup vanilla unsweetened almond milk
- 1 tsp coconut oil (for the frying pan)
- ¼ cup maple syrup to drizzle on top with your favorite toppings!
Instructions
- Preheat frying pan to medium heat and add some coconut oil to the pan.
- In a medium bowl for the gingerbread pancakes add flour, ginger, cloves, cinnamon, baking powder, all spice, coconut sugar and pinch of sea salt and mix well.
- Add eggs, milk and olive oil and whisk well.
- Drop 2 tbsp of batter to form a smaller pancake
- In the mean time in another bowl for the egg nog pancakes add flour, cinnamon, nutmeg, coconut sugar, sea salt, baking powder and mix well.
- Then add olive oil, eggs and almond milk and whisk well.
- Flip pancakes once golden and cooked.
- Add all batter until pancakes are cooked.
- Batter makes about 6 pancakes for each for a total of 12 festive hot cakes!
- Top with maple syrup and your favorite ingredients and enjoy!
