Peanut Butter Goji Chocolate Energy Bites

Ingredients

Scale
  • 1 500 gram jar creamy cashew butter
  • 4 tbsp maple syrup
  • 1 tbsp coconut oil
  • 9 tbsp coconut flour
  • ½ cup dried goji berries
  • ½ cup dark chocolate chips (I use enjoy life brand) or sub ½ cup cacao nibs

Instructions

  1. Add nut butter and maple syrup into a bowl and mix well
  2. Mix in coconut oil
  3. Add in coconut flour and mix until you can roll it into a ball without sticking to your hands.
  4. Add in goji berries and chocolate chips and mix until evenly distributed
  5. Roll into loonie size balls and keep in the fridge.
  6. Makes about 20-24 energy bites to each recipe
