Mango Crepe Pancakes with Blackberry Screamin Brothers Dairy-Free Frozen Treats

Ingredients

Scale
  • 1 cup Gluten-free oats
  • 2 tbsp arrowroot powder
  • 1 teaspoon coconut palm sugar
  • ½ tsp sea salt
  • ½ cup coconut milk
  • ¼ cup water
  • For the Mango Puree Syrup
  • 1 fresh, ripe mango peeled
  • 3 tbsp Real Maple Syrup

Instructions

  1. Mix all ingredients together with a whisk
  2. Heat a small amount of coconut oil in a medium size frying pan over medium heat
  3. Pour about ¼ cup of batter into the pan and tilt from side to side to coat the pan for a thin pancake
  4. Flip when golden brown
  5. In the meantime peel mango and add into high speed blender without the pit
  6. Add Maple syrup and blend until smooth
  7. Top Crepe’s with mango puree syrup and blackberry Screamin Brothers ice cream
