Fresh Rainbow Salad in a Jar

For the Salad:

  • 1 cup spinach
  • ½ cup orange pepper chopped
  • ½ cup yellow pepper chopped
  • ¼ cup whole pecans
  • 2 mini cucumbers chopped
  • 5 medium strawberries chopped
  • 23 tbsp Basic Roots Cashew Cheese (I love the herb flavor)

For the Dressing:

  • 2 Tbsp Olive oil
  • 4 Tbsp balsamic vinegar
  • pinch of oregano
  • pinch of sea salt
  • pinch black pepper


  1. Chop and wash all vegetables
  2. In a medium to large sized jar add bottom layer of spinach.
  3. Add next layers of orange pepper, yellow pepper, cucumber, strawberries, pecans and cashew cheese top.
  4. Combine dressing ingredients in a small jar and mix well.
  5. Top salad with dressing, mix and enjoy!
