Carrot Cake Granola Bars

Ingredients

- 2 cups coconut oil
- 1 cup raw honey
- 4 cups only oats
- 1 cup crushed pecans
- 1 cup shredded unsweetened coconut
- 1 Tbsp organic Vanilla extract
- 1 cup raisins
- 1 cup shredded carrot
- 3 tbsp cinnamon
Instructions
- Heat honey and coconut oil over medium heat in a pot, once brought to a boil turn off heat and whisk
- Add the rest of the ingredients and mix well
- Line a cookie sheet with parchment and spread mixture over the pan into a large rectangle
- Set in the fridge for 5-8 hours
