Mango Crepe Pancakes with Blackberry Screamin Brothers Dairy-Free Frozen Treats

- 1 cup Gluten-free oats
- 2 tbsp arrowroot powder
- 1 teaspoon coconut palm sugar
- ½ tsp sea salt
- ½ cup coconut milk
- ¼ cup water
- For the Mango Puree Syrup
- 1 fresh, ripe mango peeled
- 3 tbsp Real Maple Syrup
Instructions
- Mix all ingredients together with a whisk
- Heat a small amount of coconut oil in a medium size frying pan over medium heat
- Pour about ¼ cup of batter into the pan and tilt from side to side to coat the pan for a thin pancake
- Flip when golden brown
- In the meantime peel mango and add into high speed blender without the pit
- Add Maple syrup and blend until smooth
- Top Crepe’s with mango puree syrup and blackberry Screamin Brothers ice cream
