Pumpkin Spice Granola Bars

Ingredients

  • 2 cups Gluten-free oats (Only Oats
  • ½ cup canned unsweetened pumpkin
  • ½ cup unsweetened shredded coconut
  • ½ cup pecan pieces
  • 1.5 tbsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp pumpkin spice
  • 2/3 cup pure maple syrup
  • ¼ cup coconut sugar
  • ¼ tsp baking soda

Instructions

  1. Pre-heat oven to 350 degrees Fahrenheit
  2. Line a cookie sheet with parchment paper
  3. Add oats, coconut, pecans, cinnamon, nutmeg, pumpkin spice, coconut sugar and baking soda to a bowl and mix well.
  4. In a separate bowl mix maple syrup and pumpkin together well.
  5. Add pumpkin mixture to dry ingredients and mix well so the oat mixture is coating fully.
  6. Pour and spread out evenly onto parchment paper.
  7. Bake for 22-25 minutes
  8. Let cool before slicing with a sharp knife or pizza cutter.
  9. Store in ziplock or air tight containers.
  10. Makes about 24 bars.
