Spiced Pear Parfait

Ingredients

- 2 pears sliced into small pieces
- ½ cup Yoso unsweetened coconut yogurt
- 1 tsp cinnamon
- ¼ cup raisins
- ¼ cup shredded unsweetened coconut
- ¼ cup chopped pecans
- 1 tsp cinnamon
- ¼ cup Gluten-free oats
- 3 tbsp pure maple syrup
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Slice pears into small pieces and toss in 1 tsp cinnamon in a small bowl.
- Put parchment on a cookie sheet and add pears and bake for about 25-30 minutes.
- In a second bowl add everything except the Coconut yogurt and mix well for the oat spice mixture.
- In a parfait or glass jar add a layer of the coconut yogurt, then pears, oat spice mixture, yogurt, pears, oat spice mixture until you have filled the jar.
- Serve and enjoy! Feeds 2!
