Spiced Pear Parfait

Ingredients

  • 2 pears sliced into small pieces
  • ½ cup Yoso unsweetened coconut yogurt
  • 1 tsp cinnamon
  • ¼ cup raisins
  • ¼ cup shredded unsweetened coconut
  • ¼ cup chopped pecans
  • 1 tsp cinnamon
  • ¼ cup Gluten-free oats
  • 3 tbsp pure maple syrup

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Slice pears into small pieces and toss in 1 tsp cinnamon in a small bowl.
  3. Put parchment on a cookie sheet and add pears and bake for about 25-30 minutes.
  4. In a second bowl add everything except the Coconut yogurt and mix well for the oat spice mixture.
  5. In a parfait or glass jar add a layer of the coconut yogurt, then pears, oat spice mixture, yogurt, pears, oat spice mixture until you have filled the jar.
  6. Serve and enjoy! Feeds 2!
