Apple Spice Muffins with Cinnamon Crumble

		For the Muffins
- 1.5 cups gluten free flour
 - 1 tsp baking powder
 - 1 tsp baking soda
 - ¾ tsp xanthan gum
 - 2 tbsp cinnamon
 - 1 tsp vanilla powder
 - 1 tsp allspice
 - 1 tsp nutmeg
 - 3 eggs
 - 3 gala apples shredded
 - ½ cup pecans
 - ¾ cup olive oil
 - 1 cup gf oats
 - ¾ cup maple syrup
 
For the Cinnamon Topping:
- 2 tbsp coconut oil
 - 4 tbsp coconut sugar
 - t tbsp. cinnamon
 
Instructions
- Preheat oven to 350 degrees F
 - Grease a regular size muffin tin with coconut oil
 - In a large bowl add all the dry ingredients (flour, baking powder, baking soda, xanthan gum, vanilla, cinnamon, all spice, nutmeg, oats)and mix well.
 - Add eggs, olive oil, maple syrup and mix well.
 - Add the shredded apples and pecans and mix.
 - Spoon into the muffin tin
 - Mix in a small bowl the coconut oil, coconut sugar and cinnamon for the topping.
 - Drop a small amount onto the top of each muffin.
 - Bake for 45 minutes.
 - Let cool and enjoy!
 - Makes 12 regular size muffins
