Apple Spice Muffins with Cinnamon Crumble

  1. 1.5 cups GF flour
  2. 1 tsp baking powder
  3. 1 tsp baking soda
  4. ¾ tsp xanthan gum
  5. 2 tbsp cinnamon
  6. 1 tsp vanilla powder
  7. 1 tsp all spice
  8. 1 tsp nutmeg
  9. 3 eggs
  10. 3 gala apples shredded
  11. ½ cup pecans
  12. ¾ cup olive oil
  13. 1 cup gf oats
  14. ¾ cup maple syrup
For the Cinnamon topping
  1. 2 tbsp coconut oil
  2. 4 tbsp coconut sugar
  3. t tbsp. cinnamon
  1. Preheat oven to 350 degrees F
  2. Grease a regular size muffin tin with coconut oil
  3. In a large bowl add all the dry ingredients (flour, baking powder, baking soda, xanthan gum, vanilla, cinnamon, all spice, nutmeg, oats)and mix well.
  4. Add eggs, olive oil, maple syrup and mix well.
  5. Add the shredded apples and pecans and mix.
  6. Spoon into the muffin tin
  7. Mix in a small bowl the coconut oil, coconut sugar and cinnamon for the topping.
  8. Drop a small amount onto the top of each muffin.
  9. Bake for 45 minutes.
  10. Let cool and enjoy!
  11. Makes 12 regular size muffins
