Apple Pie Protein Bars
Ingredients
2 cups coconut oil
1 cup raw honey
4 cups only oats
1 cup crushed pecans or almonds
1 cup shredded unsweetened coconut
1 Tbsp organic Vanilla extract
4–5 scoops Protein powder (preferably vanilla)
2 apples shredded
3 tbsp cinnamon
1.5 tsp all spice
½ lemon squeezed
1 tsp cinnamon
2 tsp maple syrup
Instructions
1. Heat honey and coconut oil over medium heat in a pot, once brought to a boil turn off heat and whisk
2. In another bowl mix 3 tbsp cinnamon, coconut, nuts, protein powder, all spice
3. Shred apples and add ½ lemon, 1 tsp cinnamon and 2 tsp maple syrup mixed in a bowl
4. Mix dry ingredients inn with coconut oil and honey and apple mixture
5. Line a cookie sheet with parchment and spread mixture over the pan into a large rectangle
6. Set in the fridge for 5-8 hours
I am gluten, dairy and egg free along with a mitt full of other sensitivities. What protein powder do you recommend?
Thanks for your message Deb, I would suggest collagen. My favorite brands are Organika or Deep Marine. You can get that online or at most health food stores! It is rich in protein without all the other potential allergens. I hope that helps!
