Blueberry Salad with Basic Roots Herb Cashew Cheese

  1. 1 Cup Blueberries
  2. 1 Container Basic Roots Herb Cashew Cheese (from Community Natural Foods)
  3. 5 Medium Carrots peeled and chopped
  4. 1 Red Bell Pepper chopped
  5. 1 Orange Bell Pepper chopped
  6. 1 Yellow Bell Pepper chopped
  7. 1 Small handful Fresh Dill chopped
  8. 1 Medium Cucumber chopped
  9. 4 Cups Lettuce of your choice (I love spinach or butterleaf)
  10. ¼ Cup Balsamic Vinegar
  11. ¼ Cup Olive Oil
  12. 1 Cup Pecans chopped
  13. Pinch of Sea Salt
  14. Pinch of Pepper
  15. Pinch of Oregano
  16. Pinch of Garlic Powder


  1. In a large bowl, add washed and chopped lettuce along with all other veggies
  2. Wash and add Blueberries
  3. In a jar, mix Olive Oil, Vinegar and Spices
  4. Top Salad with Pecans and Herb Cashew Cheese
  5. Distribute dressing over salad as desired


Serves 2-4 depending how hungry you are!
