Apple Cinnamon Spice Loaf

2 cups gluten-free flour (Bobs 1-2–1 Flour)
1 tsp baking powder
½ tsp baking soda
4 free range eggs
1/2 cup coconut sugar
3 medium size shredded organic gala apples
2 tbsp cinnamon
1 tsp vanilla powder
1 tsp all spice
1 tsp nutmeg
1 cup of olive oil
1 tsp vanilla powder
Pinch of sea salt


Preheat oven to 350 degrees F
Grease a regular size loaf pan.
In a large bowl for the cake add flour, baking powder and soda, coconut sugar, allspice, cinnamon, vanilla powder, nutmeg and mix well.
Then add eggs and olive oil and whisk well.
Grate the apples and mix into the batter.
Add batter to the pan and bake in the oven for 50-55 minutes or until it comes out clean with a toothpick and let cool fully before icing.
Let cool and serve.
Serves 8-10
