Coconut Mint Pomegranate Parfait

½ tsp organic peppermint extract (to mix into the unsweetened coconut yogurt)
½ cup pomegranate seeds
2 tbsps unsweetened shredded coconut
¼ tsp matcha (to mix into coconut yogurt)
1 stemless wine glass or mason jar
½ cup Yoso unsweetened coconut yogurt
¼ cup gluten-free oats (I use Only Oats)


  1. Mix matcha, peppermint extract and yogurt together.
  2. Add a layer of coconut yogurt to the bottom of your jar or stemless wine glass.
    Add a layer of oats, coconut, pomegranate in it and repeat the layering until you fill the jar.
  3. Enjoy!  Serves 1-2
